White Wine
Luminous in body and with carefully controlled acidity, and often presenting fruity and floral notes, white wines should be drunk at low temperatures, almost cold, and are suitable for accompanying lighter dishes. These are the principal characteristics of the white wines that are enjoyed every day throughout Italy. White wines are made from white grape varieties, though this is not the full story – the golden colour comes from the absence of pomace (the ‘skin’ of the grape), a factor that makes the wine less dense than red wines. White wines are generally fruity or floral and delicate in nature and are suitable for a variety of occasions, such as an aperitif, and to accompany a variety of dishes, including fish, seafood, meats, etc., as long as these are not characterised by strong flavours. In contrast to red wines, white wines should be drunk at relatively low temperatures, in general between 8 and 14° C, and may be more or less sweet depending on the quantity of residual sugar present.
Italy is home to many grape varieties that produce excellent white wines, Prosecco being one that is produced exclusively in the Veneto and Friuli Venezia Giulia regions.
